Ingredients (for 4 people)
For the curry:
- 2 tablespoons of extra virgin olive oil
- 4 large carrots
- 2 white onions
- 4 cm of fresh ginger
- 200 ml coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon red curry paste (or curry powder)
- b vegetable broth
To serve:
- 4 Natura e Bontà seitan cutlets
- b. fresh parsley or coriander
- b basmati rice
Procedure
- For the curry, fry the oil and ginger in a saucepan, add the finely chopped carrots and onions.
- Brown well. Also add the red curry paste and soy sauce.
- Finally add the coconut milk and cook the vegetables. If necessary add vegetable broth.
- Blend the mixture lightly if you like a smoother consistency.
- Cook the N&B seitan cutlet in a pan.
- Compose the dish by combining a few spoonfuls of curry, basmati rice, the cutlet and a sprinkling of fresh coriander or parsley.
- Serve very hot
