Croquettes with spinach and Pumpkin-fu are one of the three recipes proposed by chef Francesco Basco during the last show cooking of the "N&B in Cucina" project dedicated to Pumpkin-fu.
Pumpkin-fu is a high-protein, soy-free tofu alternative made from pumpkin seeds. It has a nice mild flavor that absorbs your added flavors readily and a nice tofu-like texture.
Ingredients (about 8 servings) :
- A packet of rice or corn breading
- 250g of washed baby spinach
- 200gr of Natural Pumpkin-fu
- Salt, black pepper, nutmeg, extra virgin olive oil to taste
Method
- Put the spinach in the blender together with the crumbled Zucca-fu with a drop of oil, a pinch of salt, pepper and nutmeg. Blend everything until you have a workable mixture.
- Then form the croquettes and roll them in the breadcrumbs, bake with a little oil at 160° until golden brown. They can also be browned in a pan with a drop of oil.
